Goat cheese salad


After a hardcore deer gulash lunch I was really aiming for softish dinner involving goat cheese, salad and loads of legumes.
Withouth further ado, here are the ingredients:

half a head of salad - i head a very generous, plump, leafy one (the kind with the fattish leaves, bursting with freshness, a marvel!)
2 stalks of spring onion
some red raddish
1 cucumber
some cherry tomatoes
1 granny smith apple
2 stalks of celery
oregano, olive oil
1 lime
salt & pepa'
goat cheese (get the tube-like one that's soft in the middle... mmmm goooat cheeeese)

Soak the salad in a bowl full of water till it looses the dirt (unless you have the fancy lab salad)
Cut the veggies as you please (not too fine though, you loose the texture and crunchy-ness).
Toss everything in a bowl and add a few glugs of oil, salt & pepa, some oregano and the juice of one line (i wanted to avoid vinegar here since it would make it too acid)
Some oven roasted nut assortment is really the cherry on top, and it guaranteed you'll be nuts for it!

Some scattered grapes add an extra sweetness to the mix, although the apple alone does a pretty decent job!
